Fish Dishes

Chapter 3

Fish play an important part in the Caribbean islander’s diet, as it provides the main source of protein. Served chiefly with rice or potatoes, as the islanders prefer, fish can compliment an endless variety of foods and could be used with a colourful combinations such as fresh organic salads or tasty cooked vegetable dishes garnished with rich, red tomatoes. Of the many varieties available, the island people use a great deal of fish in their cooking.
Right now we are only concerned with one variety, Kingfish. This delicious variety has a similarity with fresh tuna, so you could use this as an alternative if Kingfish is not available. Both varieties can be cooked either by skewer method or under a hot grill depending on your preference. Try this simple mouth-watering king fish recipe for size.
CARIBBEAN KING FISH 700g king fish steaks 30ml olive oil margarine 1 small onion chopped 1 teaspoon dry mustard 2 cloves garlic, chopped 1 tablespoon muscavado sugar ¼ teaspoon freshly ground black pepper 3 tablespoons tomato puree 2 tablespoons Worcester sauce 1 tablespoon white wine vinegar Place the fish steaks to one side. Mix the rest of the ingredients in a small saucepan then bring it to the boil on a moderate heat, reduce the flame and stir the contents for a minute or so.
Gently remove the skin from the fish then place the fish on skewers, or on to a grill if you are grilling. Try not to pierce your hand as this could prove to be very painful indeed. Pour the delicious, hot sauce over the fish, preferably with a bowl or dish underneath to catch the excess sauce, then place the fish on a grill or barbecue and cook evenly until done.
